I want to do amateur fights but what weight class?
 
Used to weigh 80kg putting me in LHW, but I bulked up to 90 and put on a lot of muscle and some fat. This would make me a HW. I'm 6'3 and like I said those 90kg include some fat I put on, I have no idea how tall/lean the opponets will be if I fight at HW.

What would be the smartest thing to do, fight at my current weight or cut down to 81kg making me much leaner or even MW (75kg)

All the amateurs at my gym are at the MW or lower range with a rare LHW and no HW. So I assume it is much easier to find an opponent at the MW range and I'd also have bigger height advantage without losing to much muscle if I properly cut.

I really have no idea what I should as an opponent when I do HW amateur fights when I've had plenty of sparring experience with MWs

Biggest issue would be cutting down to LHW/MW, would probably take 5 months or so if I cut down at a rate of 2kg / month although I heard initial weight loss is higher than that

In boxing you fight at the lowest weight class you can realistically make without draining yourself. It's that simple.
