It can be a great help both on the offense and defense. Example I have very flexible arms and its saved me quite a few times from tapping.

I'm very flexible through the shoulders, it's saved me from kimuras/figure 4s heaps.

Flexibility definitely plays a part especially when using positions like the rubber guard, but as was said before hip positioning plays a bigger role than flexibility.
