I wouldn't tap your head, its a bad habit where someone could time you doing that. Shadow box slowly and focus on keeping your hands up. At first you're gonna have to think about putting your hands up but eventually you'll keep your hands up automatically

Work on shoulder conditioning if it's just fatigue that causes you to drop your arms.

I do tap my head from time to time. It's just a habit I formed to keep my head gear in place, but I find I do it during competitions as well, even though the head gear used is a lot more secure. I find it does remind me to keep my hands up a bit.
I still drop my hands sometimes out of habit, but I can say the habitual tap does help a bit.

It is in the way you punch. If you punch properly, where the hips and the shoulders drive the arm either into full extension, or propel them through the punch, then they will retract in the proper way. In other words, you won't drop your hands.
But if you are "throwing" your punches, punching just with your hands and arms, then you will drop your hands. Think of tying a rope around a rock and then throwing it at somebody.

is your head too high?

keep your chin in your chest, looking through your eyebrows, and your hands should be in position when you bring your elbows back to your body.

a land mark is to "look between your gloves". if you're looking over top of your gloves, your hands are too low.

Try in shadow boxing, after you punch bring back your hand to touch your chin or cheek, keep doing that time after time and eventually your body will get used to doing that and it becomes a habit
