Because Hopkins said he was a gangster and Chad was a heartless ***** in the build up to the first fight, and Hopkins pulls a quit job in the 2nd round.
It's just something new for Hopkins to try out as a form of mental warfare, he's already done the 'not talk too much' bit before.

I guess he felt more comfortable having a face-off with a guy who can barely express himself in english, than with a guy who might make him look like the "not-so-bright" man that he is.
Hopkins playing mind games. Just doesn't want to give Chad and amunition fuel him. Playing the coward/scared respectful challenger just like he did against PAvlik. Nothing new here. Only problem is that it won't work.

Hopkins would probably prefer to face lackadaisical Chad, so it would make sense not to do anything to get him extra motivated.
Yup. After all the accusations of quitting and stuff, he's decided to stay quiet. More people to prove wrong should he win the fight.
