What do you guys use for your carb sources?

I tend to get the majority of my carbs from oats/muesli in the morning and brown rice with vegetables at night.

RDJ posted a lot about teas and the benefits they can bring with regard to micro-nutrients near the start of the thread which makes a ton of sense, I don't drink them much tbh but that isn't due to any perceived health issues.

Although in saying that I did buy few different dry teas when I was in Turkey a couple months back, I need to be using them.

I normally like to fry my vegetables, am I losing much of the nutrients cooking them like this?

From what i've read, yes. I can't comment on the % loss, but it's pretty significant. Frying is probably the worst way to consume veggies. Best ways to consume the nutrients from veggies are juicing, steaming or I guess eating raw. If none of those sound appealing to you, steam frying might be a good compromise. Do a Google search to get yourself started.

It seems as though there's a fine line between eating in order to keep your weight down or lose weight vs eating for optimal performance.
I'm at a point where I don't strictly count calories anymore.
I simply eat enough good food in order to feel satisfied without going overboard and stuffing myself.
I find that my workouts suffer when I eat too little, and by easing up on being too strict with my diet and allowing myself a little extra food in order to feel satisfied, my training is more intense, endurance has improved markedly, and I feel better overall.
Many boxers are in a weight class that's too low for them, and their performance suffers as a result.

A plateau in what? Weight loss?

If so, how long have you been dieting & how many calories are you taking in per day? Also give some details about your training schedule.

since you won't be eating meat you'll have to use suplements to get your B12 vitamins. I'm thinking of trying a vegan diet for a couple weeks I just need to find a way to get all my protein needs with out intaking to much calories or fat. I think ill have to take protein powder ehich I don't ususually do.
