I think Tyson vs 70's Foreman would have been one of the most exciting h2h's.

    Most boring will probably be

Current Wladimir vs Prime Larry Holmes would probably had been a god damn awful fight with Larry winning most of the rounds in the most boring way possible.

IMO, these are the fights I believe would be so exciting had it happened:

    Chavez vs Arguello at 130

    Dempsey vs Marciano

I'm still thinking of a lot more.

On the boring side, I think Floyd-Whitaker at 135 would be a defensive fiesta.

A battle of the Sugars at WW would be compelling. There may be more action-packed fights on paper, but it would be a fascinating duel as in addition to their physical gifts they had ATG intangibles and ability to adjust in a fight.

Chavez-Duran at LW would be incredible.

Armstrong-Pryor at 140 would probably set new punchstat records.

I wouldn't call them ATG's, but Winky Wright v Marlon Starling would have been boring as ****.
