Your rankings are pretty solid from my perspective. The only thing I'd change would be to flip Wilder and Price on power.

    Power - Fury 7.5, Price 9, Wilder 9, Chisora 6
Chin - Chisora 8, Fury 6, Wilder and Price 5
    Defense - Chisora 7, Fury 6.5, Wilder 6, Price 5
    Movement - Chisora 7.5, Fury 7, Wilder 6, Price 5
    Strength - Chisora 8, Fury 8.5, Wilder 7, Price 7
    Handspeed - Fury 7.5, Chisora 6, Wilder 8, Price 7

    Out of 10, roughly

Not to mention Price almost one punched Thompson in the rematch, until we see Deontay do that to an opponent on that level, you can't rank his power greater than Prices

Power - Price/Wilder, Fury, Chisora, Jennings
Defense - Jennings, Chisora, Fury, Price/Wilder (not a lot in it here)
Chin - Jennings, Chisora, Price, Wilder, Fury
Movement - Wilder, Fury, Chisora, Jennings, Price
Strength - Fury, Price, Wilder, Jennings, Chisora
Handspeed - Wilder, Jennings, Fury, Price, Chisora

It was very hard to know where to put Wilder in a lot of these categories because I still haven't seen him in a competitive fight.

Cool thread. I would say to include another American HW, buuuuuuuuut.... Here's how mine looks:

    Power
    Wilder, Price, Fury, Chisora, Jennings
    Defense
    Jennings, Chisora, Price, Fury, Wilder
    Chin
    Chisora, Jennings, Fury, Wilder, Price
    Handspeed
    Jennings, Wilder, Fury, Chisora, Price
    Movement
    Jennings, Chisora, Wilder, Fury, Price
    Strength
    Fury, Chisora, Jennings, Wilder, Price

All of the categories feature two or three fighters, or two sets of two, who are virtually interchangeable or "tied" in my eyes.

This isn't a ranking or P4P list, so opinion or belief in a particular fighters attributes here don't need to be backed with a better resume... which would be the case if this was a P4P (depending on the definition) or divisional ranking list.

I believe that Wilder and Price would be able to mimick the successes each of them had against the others' opposition, in terms of how there power would look against them. So it's not out of the realm to rank Wilders' power as the most of this group of five.
