I am really good at counter punching on fight night champion because when I go to get punched from the other boxer I do a really quick side step to his left or sometimes to his right and then I do a punch of mine own and the camera does this flash and it looks really cool and I do that like 10 or even 15 times each round and I'm not even lying you can ask my friends.
Whitaker, Toney, Holyfield.... going further back you have the likes of Pep. Currently you have Floyd, Marquez, Rigo.

Another brilliant counter-puncher was Roberto Duran. People often remember his aggressive style, or No Mas, but he was an absolutely great counter puncher. He could attack, slip the incoming, and then counter right back.
andre ward right now is a good counter puncher. not much power but he doesnt need it sense nowone can get anything going vs ward. proly because he shuts down the jab and will counter that all night. and often times if u dont get ur jab going u aint gonna get nothing goin cuz almost everything stems from the jab.
