Floyd beat Canelo Alvarez who came into the ring weighting around 172-175lbs, although Canelo was 152lbs at the weigh in.
Sergio Martinez is a 160lber during the weigh in, and comes into the ring at 167lbs on fight night.
Canelo is thus a bigger weight cutter, who just drains himself more to make light middleweight.

doesn't drain himself too much during the weigh in..

...that extra 8lbs of weight that Martinez over Canelo, is extra muscle/bone density, thus making it legitimately seem less reasonable for Mayweather to fight Martinez.

I think there's something I'm really misunderstanding here, because maybe Mayweather vs Martinez is plausible, maybe Mayweather vs Golovkin is plausible considering Golovkin is only 165lbs during fight night?

Canelo DID NOT come into the ring 172-175, he weighed about 165 against Floyd.

He has come into the ring about 170ish in other fights, although fight night weights are not official. he could be wearing jeans and a jacket in one and not in another.

Oh I think it's Angulo that comes in at 174lbs - but I think Canelo has come in at 172lbs before.

So your answer is - Canelo is not a weight cutter, he was wearing full clothes - full clothes doesn't weigh almost 20lbs btw.

EVERY boxer is a weight cutter barring maybe Floyd and PAC and even they cut a few pounds.

But yes, clothes could add 5lbs to someone.

Most fighters about 10lbs....20lbs tends to be the extreme limit. Clottey apparently rehydrated 23lbs in one fight

It can add less than 5lbs, but still that does not equal 20lbs.
Clottey is a weight cutter like his weight cutting brother Donaire, their wins hold less value.

Nevertheless...Mayweather vs Golovkin - why not fight the 160lb version of Golovkin considering he comes in at 165lbs on fight night?

Gonna need a source on Golovkin. He was 170 against Macklin and most of his other HBO fights haven't had fight night weights since New York doesn't allow them.

Froch is another who fights at his natural weight:good

RE Martinez/Canelo, draining can take a lot out of a fighter. Being naturally bigger but draining can make you a physically weaker opponent than a naturally smaller one. Look at Ryo Miyazaki's bout with Fahlan Sakkreerin Jr as an example of that.

You say weight cutting like its a bad thing or like its rare. Liek I said, nearly ALL fighters are weight cutters. Some less, some more.

How can you say they hold less value? They make the contracted weight, so why does it matter. Some people say cutting weight "drains" you.

Usually when a fighter is popular, peoplethey say they were drained.

If a fighter is unpopular, hes a "weight cheat"

If you can do it, then good for them.

Golovkin comes in at 168-170 from what Ive seen.
