Gotta go with Joe, but Winky getting his breakout win over Sugar Shane was one of my happiest moments in boxing. Nothing against Shane, but Winky had been toiling in obscurity for so long that seeing it pay off was nothing less than magical. Both were fairly similar: talented, clever southpaws who only came to be properly appreciated at the tail end of things. I don't know the rest of these jokers and don't presume who they might be. You're painting with an awful broad brush.
