neither. I am assuming that Canelo's camp for the fight is around 4-6 weeks. The weight loss isn't linear. In his first lighter routines he loses a bit of fat which he gains in between fights. There is actual weight loss. In the next weeks he likely gains a bit of weight because of added muscles. This doesn't go that fast for everyday Joe but Canelo is a professional athlete, his body is used to that kind of routine and his body will adapt quickly to the big amount of exercise. Uneducated guess would be that he will be around 168-170 pounds before he cuts the water to hit the scale at 155 In the actual fight he will be around 170-173 as usual as he refills water to the max to prepare his body for the maximal stress and the high intensity of the 12 rounds. Bottom line is that the weight loss infront of a fight isn't linear but it has up and downs depending on stage and intensity of training.
I don't know why he's so intent on draining down to 155, he already looks great, and as Doc said, he'd be doing himself a favor not losing those extra 5lbs
Because the people around him are used to getting him down to 155 and regain as much weight as they can. Other fighter's and the people surrounding them don't have that experience as it is Canelo weight which results in Canelo having a weight advantage on actual fight night.

That the people around the fighter don't exactly care too much is unfortunately no news in boxing. You just have to look at him at his weigh ins, they probably need to bring him in a wheelchair in some years, he really looks very, very dry.
The brain does not rehydrate as quickly as the rest of the body. Boxing needs to end this and test for hydration.

Canelo's weights on 30-day weigh ins 167.2 for Josesito which was at 154, Josesito was 166.5 166.5 for Trout which was at 154, Trout weighed exactly the same 167.8 for Cotto which was at Canelo Weight aka 155, Cotto was 160.2 166.8 for Floyd which was at 152, Floyd was 150.2 163.8 for Khan which is at Canelo weight 155, Khan's weight not available yet Golovkin's 165 for Lemieux, Lemieux was 175.8 172 for Murray, Murray 169 165 for Rubio, Rubio was 174.5 169 for Monroe Jr., Monroe refused to be weighed. 164 for Wade, Wade was 175.6. Their fight night weights Canelo 167 - Mosley 164 Canelo 171 - Lara 166 Canelo 172 - Trout 171 Canelo 170 - Angulo 174 or it might be the other way round (some sources say it was this and others say it was actually Canelo who weighed 174, either way Canelo was 170 minimum). And he was obviously 170 at the very least on the night for Kirkland and Cotto too. Golovkin 173 - Rubio 181 Golovkin 170 - Macklin 170 Golovkin 168 - Proksa 166 Golovkin 167 - Rosado ?
