I don't think Epic would of bid if they didn't think they could make money from this fight, unless of course they are complete chancer's and miscalculated. Fight will need to sell well for them to make a profit though. The $1.5 mill is just the purse of Whyte and Pulev, they'll need to pay for an under card, pay for advertising, the venue hire which if it's the O2 will cost £80K alone.
So Whyte vs. Pulev (Non title fight) generates a similar purse as Wilder vs. Brezeale (title fight). Interesting!
The business of making fights is to be profitable. Whether he has 1 bil or 10 bil its irrelevant. Him and Sauderland would bid what they feel makes the card profitable. You had two bids which were similar and one twice as high.
DAZN can afford to overpay(thats the word atm, who knows whats really going on), but like you said, Eddie and Sauerland need to make a profit. And DAZN is not in effect yet, at least it wont be for this fight.
