He had one fight against a total nobody, so it doesn't count.

Jake Lamotta fought amateur as a light-heavyweight (stocky-pudgy 5'7") and turned pro as a light-heavy as well. Moved down to middleweight after mixed results in his first 10 fights. Stayed there most of his career. Rocky Marciano was a pudgy 215lb amateur with poor conditioning. Somehow turned that around (better diet/training?) and was a much leaner 185lber for most of his pro career, sometimes weighing a bit less. Bernard Hopkins turned pro at light-heavyweight and after a couple of fights moved down to middleweight. Former Light-heavyweight English Champ John Conteh fought initially as a heavyweight but moved down to light-heavy as he was a bit too small. Maybe would've made an ideal cruiserweight but there was no such division at the time.

Nonito Donaire: He moved up from 118 to 122 in 2011. He was 28 years old at the time. Became a unified champion at 122. Then he moved up to 126 at the end of 2013 and won a world title there. In his 3rd fight at 126, he was stopped by Nicholas Walters. He then started moving back in weight. He moved back to 122 in 2015. Not a big deal since he was clearly too small for 126. Stayed at 122 for over 3 years. And then last year, he moved back to 118 to participate in the WBSS bantamweight tournament. He made the weight and won a world title in his first fight back. He turned 36 two weeks later. He defended his title a few weeks back too. Surprisingly, he weighed in at 117.5 lbs both times. Now he's set to fight #4 p4p fighter Naoya Inoue in a unification fight (final) this summer.

Hideyuki Ohashi fought at light flyweight, winning the Japanese title but losing to Jung Koo Chang twice.

He later moved down to Minimumweight and had a successful title run.

Today, Ohashi is the promoter of Naoya Inoue.

Actually if you look closely Jake more often than not failed to make the middleweight limit and usually game in a few pounds — often 5 or so — over. Which is somewhat understandable in non-title fights, except that a great majority of his bettter opposition were welterweights who moved up in weight to fight him but came in well below the 160 limit. In actuality, very often it is what today would be considered a super middle against a junior middle (who is really a puffed-up welter). Quite an advantage.
