You state Jacobs is a lot bigger than Canelo, but Canelo couldn't make 154 without cutting an arm off so where exactly do you think they could have fought? You're basically saying Jacobs was overly drained against Canelo, cause they fought at 160.

because it is a handpick. It is a risk since Kovalev is still a hard puncher, but Kovalev has lost 2 times and both being stopped. He has weak enough stamina now, and if he goes past 6 or 7 someone can start to hit him and exploit that. It would be a good win, but most people pick Canelo.
