Jackson and Hearns are probably the obvious answers but what other huge punchers has the division produced?
#1J,Jackson both hands any power shot in close or outside. #2 T.Hearns his right hand possibly the single hardest punch in history any weight. #3J.Mugabi wasn't as sharp as the two above him, but viscous power never the less. Those are the top 3 in my opinion

If we're going to be honest, he was hardly a KO phenom at that weight, at least according to the surviving record. He seems to have gained his power as he moved up and aged a bit.
The top picks are already there; you could probably start and end the thread with Jackson, Hearns and Mugabi. I'd throw Tito Trinidad in there as well, as he was lethal in his short spell at the weight. A guy who hasn't been mentioned yet is Laurent Boudouani. Vazquez was a tough hombre in the classic Argentinian mould, but Boudouani pretty much took him out with one punch to claim his title. I remember seeing Boudouani early on against a tough British fighter called Andy Till, and his power was clearly a cut above what you'd normally see at British/Euro level. Vazquez himself was heavy-handed. He iced Carl Daniels with a single southpaw left when a mile behind on points; one of the classic knockouts of the 90s. He also dropped Winky Wright several times, and came closer to stopping him than anyone else. Wajima was a heavy-handed guy as well. More of a swarmer than a one-punch guy, but he had a high stoppage percentage and was certainly dangerous.
Maybe not on the level of most of the above mentioned but Buster Drayton at light middle was a helluva puncher.
So was one-time Drayton challenger Said Skouma. Knocked Jimmy Cable down something ridiculous like four times but still managed to lose, and then had Drayton rocking all over the place on multiple occasions. That's a fight that I wish someone would upload in full - YouTube had a few rounds of it a year back or so, and from just that it looked like a classic war. I remember Harry Carpenter saying of Drayton, "This man comes over here and just destroys British boxing."
