Might've tested positive before rather than "having" it in the true sense , some fighters have tested positive but had no lingering effects like Vlasov, Canelo etc. , AJ's case is in no way similar to Povetkin who looked as if he was gonna faint on his ringwalk. Given that over a 3rd of people who test positive don't have any symptoms and he's in a very low risk category and his very high level of fitness I'm fairly sure AJ won't have any lingering issues from covid if he had any issues at all from it in the first place.
