A young Holyfield would set a fast pace, and this would wear Fury out down the stretch ,

Nope, Holyfield to fast for fury, plus he would be banging fury to the guts all day. Holyfield by beat ups.

I could see both taking at least 1 fight in a 3 fight series. Prime Fury is a HUGE threat for many reasons. Evander proved in the Bowe & Lewis rematches (he lost Vs Lewis second time around but it was very close) that he could adapt and adjust.

Have to imagine Holyfield outclasses him.

Prime Holyfield fought only one modern super heavyweight - Bowe. And he has a 1:2 win-loss ratio.
That would more or less mean that Holyfield from the Bowe 2 fight should be selected to fight Fury.
Among other fights with modern super heavyweights, there are two fights with Lewis (realistically - two defeats), as well as a fight with Valuev (defeat of Holyfield, but also success in those years).
This would mean that the result of Holyfield Vs. modern heavyweights 1:5, and that doesn't give him the best odds against Fury.
Fury wins one way or another.
