Would beating Dubois twice do anything for Usyk's legacy?

Depends what Dubois goes on to do. Those wins have the potential to do more for Usyks legacy then all his other wins put together. Its the only Usyk win that has the potential to "age well". If Dubois goes on a wrecking tour for the next 10 years he'd take Usyk right with him to whatever heights he reaches.

If Dubois beats Parker he is defo the number one challenger and to prove yourself as the champion, you need to beat your best challengers in Dubois or Parker.
