I watched the fight again (it only takes 5 minutes of my time anyway) and Pac's eyes were open when he started throwing the punch, I think the reason his eyes were closed was because Hatton's weak ass jab grazed Pac's face while he was throwing that KO punch. I don't think it was a hail mary at all, he timed it perfectly.
