This often happens with American-level athletes. Most Euro-level athletes stay in shape decades into their retirements.

when you say training was mike doing things like a treadmill and watching what he ate/cutting back? Or did he actually start sparring and **** like that? I need specifics.

when they retire they just don't have the hunger or passion to stay in shape. Besides, you're exaggerating about them being unrecognizable. Their bodies need rest.

I think he said in an interview that he changed to a vegetarian diet and became obsessed with running.

I'd guess a combination of being used to a high calorie diet to feed there bodies while training intensively and that training being hard to recreate in there post boxing lives with no strcture or goal to aim for.

Tyson likely got back in shape because his profile has risen again over the last 2-3 years, more motivation(both personal and finanical) to look something close to the shape he was in during his career.

That's only because they refuse to relocate to America. They care about legacy. If these European professionals based themselves in America they would have 5x the earning power of Mayweather and Tyson combined. They have the the charm and conviction to be international superstars.

It's natural to belly up as you get old. Hard to go against the nature of aging.
