Yes, prime Roy vs prime Calzaghe would be a very interesting fight. Those that say "Jones by KO" are exaggerating and underrating Joe. But Roy would definitely be the favourite and my guess is he would win a competitive 116-112ish UD.

And no, Hopkins definitely doesn't look 43. Jones looks a lot more like 43.
