Most fighters use head movement to confuse their opponents, but when trading punches these guys have excellent rhythm that the angles allow their heads to get away from uppercuts and hooks from close to mid range, while firing shots of their own:

Tyson, bobs and weaves in between trading punches
Roy Jones, bobs and weaves before throwing a hook.

Ali basically had a nimble body and relied more on footwork to dodge rather than head movement for defense, while trading punches (IMO). He uses head movement to evade mid-range punches, but normally slugs it out or sidesteps with some head movement to evade. But close range, his head normally stays stationary.

Gatti used his head a lot when he is cornered in the ropes.
