Only a few generations ago we considered the Italian immigrants not 'white' because they were not Anglo-Saxon Protestant. Before that it was the Irish because they were Celts and Catholic, hell they fought against us in the Mexican War because they saw it as Protestant vs. Catholic rather than English vs Spanish.

If nowdays we can consider Italians and Greeks and Macedonians and etc to be 'white' despite being so Mediterranean instead of Nordic, even the Hispanics we have now will at some point be classed as white because they're mixed Spanish and native American.
