Greatest fights to watch to gain a better understanding?

Just watch everything you can. Any title fight from before 1980 will give you fighters that can spark off a historical interest.

Post-1980 there are exciting fights, in good quality that can wean you into the old timers gently.

Chacon-Limon IV is your start point I think. Watch that and you'll be hooked.

That's a pretty good mix to start with IMO

 

Its easy to watch the great fights. You will only be a boxing fan when you start rewatching fights like Rahman-Ruiz...
