Most of the obvious Heavyweight ones (Chuvalo, Ali, McCall etc.) have been named, but an honourable mention should go to Marion Wilson. Only a journeyman but he faced a lot of the better Heavyweights of his time, and none of them stopped him. Gaspar Ortega is another (relatively) obscure great chin.
