I think Hagler needs to be in there too. Legitimately tested by the likes of Hart, Hearns, Mugabi, Sibson and many others and he always responded flawlessly. His chin never gave way as he aged as some others eventually did like Cobb, Mercer, Fenech, etc.
JC Chavez until Randall cracked it. Faced world class competition for 10 years in three weight classes without ever having appeared to be staggered, let alone dropped - except for a brief moment in the first Roger Mayweather fight.
Yuh is a good shout. Guy had a damn block head lol, and was also much better defensively than some recollect.
Fighting against Graham must've been awful. If you could get past his magnificent defense and beautiful boxing, a cast adamantium chin was waiting for you, and he wouldn't shy away from infighting if needed.
Max Baer. He had about 80 fights and only stopped against Louis, and late in his career against Lou Nova, and was never knocked unconscious . Dude has an iron chin, one of the best in the history of the HW division.
Wilfredo Benitez, perhaps? Went a very long time before the TKO by Leonard. KO'd be Matthew Hilton late in his career. Great counter puncher off the ropes. Didn't stand and trade which is probably why he didn't get knocked out except for that one time.
Watch the Bruce Curry fights, at least the first one. Benitez was very chinny. Not very durable at all, actually.
Saoul Mamby at 140. EDit: Lasted the full route against the likes of Duran, Cervantes, Maungsaurin, Costello, and DeJusus at the weight. Wasn't dropped at the weight, only hitting the canvas in his late 30's once he moved up to welterweight.
At HW: McCall, Tua, Mercer, Chuvalo, Cobb, Toney, Marion Wilson, 90s Foreman, Mavrovic, Wach, Dominick Guinn (really underrated chin this guy had). Mariusz Wach is like the modern day Chuvalo. Completely hopeless at avoiding punches but never seems to get even slightly buzzed. He's been stopped a few times, mostly due to circumstances not surrounding his chin, but I can't think of any HW that comes close to being able to absorb punishment in recent years. Guillermo Jones was virtually indestructible at CW. So was Ismail Abdoul (another really underrated chin).
While we're all making hipster choices this obvious one eluded us. I doubt anyone faced and survived as many huge punchers as Ali did and what's more thrived against them. Insane chin along with crazy will, speed, skill grit and heart.
