Half way through round one when he realised Fury was going to stick to him like **** all night, Wilder had those deer in headlight eyes, massively bug eyed. He looked terrified.

As clear as I see the sun in the sky. His face was a mask of fear as soon as it dawned on him that this wasn't no 40% shell of Fury this time and it dawned on him almost immediately.
The fear was a result of him realizing that he didn't have the skill needed to defend himself against Fury. His best defense is for everybody to be afraid of him and then he just cocks a big right and it's over. But the right never landed against Fury.
I see it differently. To me fear set in when he realized that he didn't have the tools to defend himself. Either through delivering his own artillery or by defending against Fury's. When you find out that, 1. You can't hit your opponent and 2. You can't stop him from hitting you, fear begins to set in.
When his head sprung back like one of those toy men with a wooden ball head on a spring from a Fury JAB, then he landed his best "eraser" right, and Fury brushed it off like a slap: Wilder's mind was like "I AM actually a hype job, and I'm going to get battered senseless." It wasn't fear, it was TERROR. He was terrified.
The right DID land. 2 or 3 times. But this time Fury was properly fit, and it didn't trouble him much.
A fit and healthy fired-up and fully motivated gypsy man standing in the opposite corner to you is a truly terrifying sight for any non gypsy man to have to face.
