BHOP had multiple ones. His wins over Trinidad, Pavlik, Tarver, Cloud etc. Were completely one sided and career changing for all of those. The four I mentioned never did much of anything post Hopkins. He simply pulled their teeth.

Michael Watson vs Nigel Benn was the fight that instantly sprung to mind. Benn was as raw a pressure fighters as you'd get at that point and hadn't quote evolved into the fighter he'd be later on. That said, he was a destructive menace offensively, and he didn't iron out any of the major issues Watson exploited until his venture up to 168. His pacing was poor throughout his middleweight tenure and his power and hand-speed was at his apex in this pre-Eubank period. Watson saw every issue Benn had, and put together a plan on beating him. He knew he had to shut down Benn's offense. He saw Benn's wild hooks and lack of short punches, and decided reinforcing an active high-guard with parries would be the best way of doing so. He just stood in the pocket or against the ropes and dismantled Benn with it. He also used the twisting motion to disguise and hide his frames and pins. That tactical positioning was as detrimental to shutting Benn down as the guard was. He worked his jab in the interim periods where Benn wasn't swinging wildly. He countered some of the most obvious shots and showed a great chin when Benn had his spots of success. Whenever he felt Benn was trying to take a breather, that's when he flurried and worked the body. He wore Benn out quick and ended it with a heavy jab. It's one of my favourite performances.
