An uppercut doesn't need to be from the arm opposite the lead foot at all, Wifredo Gomez, Zarate and Foreman in his second career all threw by the book correct left uppercuts. On the other hand Razor Ruddock threw as you put it a hybrid left hook that wasn't a real uppercut. The problem is the left uppercut (for orthodox stance) isn't often taught so theres this misconception. Its not easy to learn correctly without a skilled trainer who knows how to throw it himself.

One of my favorite moves in boxing is slipping inside a jab and countering with a left uppercut to the chin or solar plexus, then come back with a right hand or roll under and out to your right. The problem is that it requires a pretty high level of coordination in the movements of the body, from the way you turn your weight to slip the jab to the way you move your feet to get close enough to throw a proper uppercut, to the way you move your right foot to put you in position to either throw the follow up right or to be able to roll out. What is a lot "easier" is to step with the left foot, lean over it and swing your left arm because your can compensate for the distance by opening the bend in your elbow. That is what you see a lot of now. It is also why you have a hard time teaching the correct way to people that see their favorite fighters doing it wrong.
