If we're looking for the boxer with the most fights, where he weighed above 175 lbs - my guess will be Sam Langford. On Boxrec a lot of the weights are missing - but he was likely a HW for approx. the last 185 fights (since he met John Lester Johnson in 1913)
Out of all boxers ever, in *any* weight classes, the top guy is apparently Len Wickwar with 467 fights in a 10+ year career. So that's probably the upper limit on how many fights fighter of any weight class could realistically rack up. (Although Wickwar himself had a career that included WW2, so he might have had more without the War.) That said, Wickwar was not a heavyweight. The top scoring heavyweight is probably far lower.

If at least three fights on Archie Moore's boxrec pro record were gimmicked boxing matches against pro wrestlers, on pro wrestling bills, I do wonder how many Carnera had among them 102?!
It's an interesting question as the heavies don't necessarily go a long way with fghts. However, not really trying too hard I did find George Godfrey with 124, Tony Galento with 112 and George Chuvalo with 93. Tommy Far looked to be a good one with 142, but a lot of his career was also at light heavy which eliminates him here. But good question.
