I'm looking for any good examples where one fighter weathers an offensive onslaught and then regroups to turn the momentum back in their favor.

A notable example would be Lamon Brewster vs. Klitschko I, or Moore vs. Durelle

Matthew Saad Muhammad in pretty much any of his championship fights but most notably vs Yaqui Lopez in round 8 of their classic fights.

Chico vs Castillo I is an obvious choice and possibly the gold standard as for a championship fight. Another obvious one would be Lamotta vs Dauthluille.

Prince Charles Williams vs Bobby Czyz. Bobby knocked him out but Prince Charles didn't fall, so Bobby kept hitting him. Unfortunately Czyz hit him once too often and knocked him back in. Williams stopped Czyz later in the fight.

From memory Williams couldn't miss with his jab after the early knockdowns, he gave Czyz a clinic behind the jab and closed his eye completely.

The 2nd fight was also good aswell and Williams used different tactics to beat Czyz that time.

A lower key version of some of the examples already posted but Juan Manuel Marquez did a great job of this against Juan Diaz in their first fight.

Bowe vs Golata in the rematch, to a degree. Golata was ripping Bowe a new one for the whole beginning of the fight, then Bowe got a few good hits in, hurt Golata and dropped him in round 4.

I think Holmes vs Witherspoon, round 9, fits this subject like a glove.

Abbreviated yes, but Liston weathered the Big Cat storm (just raining cats, no dogs) to come roaring back, particularly in the first fight.

    I hope I haven’t activated a certain person’s “Cleveland Williams Alert”. :D

Miguel Cotto in the 3rd round of his bout with DeMarcus Corley. How he came through that round was amazing.

Mancini did it twice. Took Frias' best in the first minute and immediately sent him on his way and did the same with Duk Koo Kim after an eighth round that he admitted he almost quit after.
