When I was in the gym watching sparring, the two heavyweights going at it were wearing 20 ounce gloves. What would happen in the pros had they began to use those heavy hitters gloves? Would it prevent less kos? Or would it just cause a prolonged beating?

The bigger glove is to protect your opponent - it is for sparring. It is also heavier, so if the professionals were to use these, their punches output will decrease, even landing some punches will become harder when they have to go through the other's guard. The bigger gloves improve your strength and endurance as well because they are heavier.

Kind of wonder if there were no restrictions on glove size what size most fighters would pick.

And, conversely, if you were allowed to pick your opponent’s gloves (and he yours), what people would pick.

    Can only assume...

If you mean choosing the gloves your opponent must use for the fight - some d*rtbаgs as Wladimir Klitschko did so.

On a side note, how often are 8oz gloves used in the pros? 10oz usually seems like the go to in almost all the bouts I’ve seen live.

It is something like 8 oz for fighters up to 135 lb and 10 oz above 135.
