    How about past prime Ruben Olivares knocking out the up and coming unstoppable Jose Luis Ramirez. Ramirez only stopped once in 111 fights and boxed at the very top level.

    Funnily enough your example at the start of this thread was the one which instantly sprang to mind for me, @IntentionalButt. Great call.

    Thomas Tate didn't face all that many elite operators or huge bangers, but amongst the ones he did was Julian Jackson who was of course arguably THE premier banger of the era. Went the full twelve with him and took plenty of leather, so safe to say his chin was pretty stern to say the least. So it's no mean feat that Roy wiped him out with a single left hook. The only stoppage loss of Tate's career, in fact. Not a bad feather in Jones' cap.

    Aaron Pryor got stopped the once by Bobby Joe Young (though he was the husk of the fighter he once was by then).

    The great Freddie Welsh was stopped once in 160 fights but it took Benny Leonard to turn the trick.

    Maxie Rosenbloom is an almost mention. Stopped twice 9 years apart in almost 300 professional fights. An amazing effort that deserves some credit.

    * Jimmy McLarnin was only stopped once in his illustrious career, at the hands of Ray Miller. That loss was subsequently avenged.

    * Anyone mentioned Joey Maxim, yet...? Only stopped once as well, I believe, at the hands of Curtis "Hatchetman" Sheppard. Loss was also avenged.

    Sailor Burke finally knocking out Joe Grim may be allowed as cracking his era's toughest nut, though I believe Grim never actually won a fight in 63 tries. (Someone can correct me if I'm wrong.)

    Kaokor Galaxy was stopped by Flash Elordre and was an iron man his whole career up until that fight.

    Khaokar was stopped by Luisito Espinoza, not Flash Elorde. Elorde fought in the fifties and sixties.
