He's brash and arrogant, that is his brand and his act, there are tonnes of fighters that have confidence, some more than others.
Eubank JR wants to play the heel the people love to hate, it gets him bums on seats and makes him value for money, you may not like it but it's important in boxing to have people that appeal to the casuals.
Do you only want boxers to be respectful and boring all the time?, boxing needs superstars and excitement (not the Eubank JR is a superstar) but he's entertainment value.
