Just watched Foreman's fight with Lyle and Buddy Baer's fight with Louis. Both men had similarities in styles in my opinion, only Baer was 3 inches taller, and weighed about 30 Lbs more than George in his prime. First thing I noticed is that Foreman is more forceful, at the expense of leaving his chin wide open. Buddy seems to be at least partially interested into protecting his face and body. Foreman usually tried to fling both arms in the way of a punch if he thought one was coming, as they were more often than not extended already, pawing, pushing, nudging. So, my tiny contribution to start off is that I deem Foreman more offensive, and more leaky defensively.
Good assesment, and I actually made some of the same observations. Baer definately covered up more, and threw straiter punches as well. One big mistake that I think baer made against Louis, is that he didn't jab enough. He was a bit over zealous, in trying to kill Louis with big shots, particularly the uppercut. If you noticed, he did occassionally use the jab, and it seemed to briefly keep Louis at bay.

Foreman was much better in his offensive footwork.....he was really good at that.....and this is something that made ​​a big difference in terms of his efficiency....if you take it from him and he would be like Holmes without a jab......
