The jab is not really an aspect of boxing that I am all that enamoured with, but I am trying to pay a little more attention to it these days. The best use of the jab that I can remember seeing (being someone who doesn't look for it specifically in fights) was Pernell Whitaker's jabbing off the back foot against Azumah Nelson, and there was that lovely highlight of Marco Antonio Barrera stabbing Naseem Hamed's confused face time and again with it in centre-ring. Cotto has great jab with power behind it. He jabb'd the **** out of mosley with it & has put Gomez, Clottey on their asses with it. He was snapping Manny's head back too.
Chris Eubank in many of his fights - got past the long jab of Malinga by stepping into and/or doubling his own, kept the hands up of Rocchigiani and Thornton by trebling and quadrupling it and closed the left eye of Wharton within two rounds with it, also dropped Sherry with it in the first round.
I second that, he used it well and it brought Corrale's hands down and made him bend over more and it allowed him to land his lead hook over and over. I also liked Winky Wright's against Tito, but somebody already mentioned it
The jab is easily my favourite punch. Whitaker and Ali are good mentions. Ike Quartey had a SUPER jab, particularly highlighted in his match against Park.

What about Mark Breland, his jab was as hard as a right hand and inches longer than any of his opponents to boot.
Holmes in his 80s title reign had one hell of a jab, imo it beats Ali's jab, they say Ali's jab was quick and it stung, but Holme's jab was quick but also had force behind it
