Yong Kang Kim and Israel Contreras were both one-sided wars. I'm sure he had others but they stand out. I'd watch his brother more though. Khaokar was the better of the two IMO, and his first fight with Sung-Kil Moon was real good. The rematch is one of the ATG great bantamweight performances ever. Khaokar also beat Wilfredo Vazquez who was in some good fights with Canizales and Lora, but one of the best fights ever with Antonio Avelar. Speaking off Moon, he's probably your best bet if you're looking for great fights. He fought an amazing back and forth war with the hard-punching Nana Konadu. He also has good fights with Torsak Pongsupa, Carlos Salazar, Chiaki Kobayashi, Singnoi Singkrungthon and I'm sure there's others I've not seen.
Sot Chitalada has two real good fights with Chang, both of which he should've lost IMO. He also should have two losses to Kam IMO too. However, he was in some good fights with Charlie Magri and an awesome rematch with Gabriel Bernal. He's a huge flyweight who's jab is wicked. Very well schooled Thai, and a very good fighter. Zapata is what you'd expect from a Panamanian out-boxer. He's fast, long, rhythme-less and extremely skilled. He is super inconsistent though, and fought lost to lesser fighters. He has a very good performance vs German Torres, who's a noted puncher. The fights with Laciar and Bassa might be good too, I've never seen those fights, but I know that those guys are always pretty entertaining. And he also has a 'win' over Jung Koo Chang, which is a really good fight. Chang was always in good fights. The Tokashiki fight is one of the best ever IMO, and Ohashi, Muangsurin and Chitalada fights are really good too. Chang's entire career is binge worthy, but those are my highlights. I haven't seen Torres I or II though, and they're supposed to be good. The first a great performance and second a great fight. Apparently Chang only ever put in 100 percent effort for two fights, being Torres I and Zapata II, and the Zapata rematch is an unbelievable performance.

LOL Funnily enough, the hardest I was ever hit was by a regional-level pro flyweight. He was in Matthew Hatton's gym to tick over and he wanted someone to spar with, I was pretty new there then, and they let me in with him. I'm about half a foot taller and 50lbs heavier, but he knew to go to the body and I was still feeling it days after. He was called Jimmy, but I never caught his surname and haven't seen him since. Weird, he was a good guy and a wily veteran.
Right now I'm 5'11 and about 155-160lbs, then I was 5'10 and about 150lbs. Although I'm only 16, so I'll probably grow again soon.
