Victor McLaglen, the first white hope to try to defeat Jack Johnson, went on to have a successful acting career, winning an oscar for 1935 film "The Informer".
I once saw a cameo of Holyfield as himself, but of course it was only a short walk-on role and you couldn't form an opinion on that. A boxer that impressed me some was Joe Bugner in his appearances as a villain in the western movies starring Bud Spencer and Terence Hill. Not enough speaking parts though. But he had a natural presence.

Oh yes I agree. I think he could make a career of it. Ex-champ Ken Norton did a creditable performance as a slave who was seduced by his sex-starved master, the delectable Susan George, in Mandingo. Too bad that wasn't followed by another movie project.
