I believe that Ashita no Joe was a influence on Yoko Gushiken.

EDIT: Turns out he was more inspired by the manga than the anime. This may not count then.

I know this isn't TV inspiration but I think it's interesting

Muhammad Ali whupped Superman in a comic book.

That’s pretty inspiring in and of itself.

I read Audrey Harrison's autobiography I am pretty sure he said the Rocky series inspired him and he used to watch the films repeatedly on VHS.

Not really. Superman was an untrained average guy without his powers. Typical fan boy bigging up Ali.

Vinnie Paz the rapper made his name from, well, Vinnie Paz.

Pacman Jones, a cornerback for the Dallas Cowboys. Pretty Boy Floyd was from The Great Depression era of the 1930's, along with people like Ma Barker, Bonnie and Clyde, and John Dillinger.

Luis Ortiz took up boxing when he saw a lithograph of the Mendoza vs Humphries battle of 1790.

Actually the opposite of the topic, but brief welterweight champion Pete Latzo (who later campaigned all the way up the heavyweight and was a respectable contender as high as light heavy) was the inspiration for Joe Palooka, who had a long-lasting newspaper comic strip as well as comic books, movies and plenty of other pop culture incarnations.
