Going there in 2 years (Osaka) and I was wondering if I should take a break from boxing or continue training there.

How long are you going there? i would say if its a short period of time then just focus on running, weights, etc, but if its a long period u should for sure continue training there.

Boxing's quite popular in Japan and Osaka's a big place, so there will be shitloads of gyms to choose from.

I train in Korea and though the language barrier can sometimes be pretty annoying, generally it's not too much of a hindrance. Don't see any reasons at all for not joining a gym when you get there.

    A year.

I'm worried that I might be too heavy/tall to find a sparring partner. Hoping to train at a gym that has a lot of stationed US military training there

Bro, there are some good Japanese fighters, don't underestimate them. We got a lot of Sailors, and Marines in Osaka, so I am sure you will have no issue.

I know an American guy stationed over there named Jason Ozuma, he might be able to help you out.
