When I am sparring I am either blocking my opponents punches (Jabs, crosses) or slipping the punch. However whenever I watch boxing the boxers also bob and weave. My newbie question is what is the main difference and relative advantage of bobbing, weaving over slipping? My understanding is that slipping involves avoidance by movement of the upper body and head whereas bobbing/weaving more movement with the legs?

When I look on youtube for examples of each I seem to get very similar movements for each, does anybody have any "textbook" examples of each technique?

This is part of the training you will get once you have found a competent coach.

Slipping is evading a punch by moving your upper body out of its path. Bobbing and weaving is giving your opponent a moving target by moving your upper body in different directions. You can slip a punch while bobbing and weaving.
