What I don't understand is how he goes from weighing 165 30 days before the fight to 172 on fight night.

He isn't draining himself 30 days before the fight, that would be pointless, and ridiculous.

The unofficial fight night weight is very subjective. I wish I remembered the boxer that provided the detail, but what he said was how they weight you depended on when they catch you. It could be before you make it to dressing room. Where they weight you with your full street cloths (watch, jacket, shoes, jean, what ever is in pocket, etc....). So unless HBO or whatever network provides detail on how the fighter was weighed unofficially, it is meaningless.
