What you prefer, how to choose weight class in boxing? For example. I'm 190 lbs, so should I cut to 180 lbs or just go to 201 lbs?

Train to the point you feel your best. There's your ideal weight.

It's about your performance, not how much you weigh.

^agreed. I fought amatuer and pro across 6 weight classes and I can tell you two things
    1. Fight were you are comfortable and in shape. If you are in phenomenon shape at 190, give u the weight and fight at 201. If you have extra fat you could shed, then maybe consider 180. Listen to your body.
    2. Never drain your body to go down a weight just to have precieved size advantage. Skills are what matter.
