Because they're draining themselves to weights that are far less than what they train at, which is less than what they walk around at. It's not easy as the body is always trying to maintain homeostasis, one little thing can cause your body to retain more water than you accounted for.
It's not like they've been eating too many donuts and been lazy, it's because they're asking too much from their bodies. Rios not eating and drinking for a week to make weight was an incredibly stupid example of what fighters sometimes do to get a perceived size/strength advantage in a fight. Often draining themselves that much has the opposite effect but in the fight game health and science isn't usually given a lot of thought.
Professional fighters aren't professional in the same sense as other athletes, they aren't necessarily the best boxers, they're just being paid to fight. Other sports have pro athletes with access to the best facilities/coaches/sports science, a pro boxer can be a bum living in the slums being trained in his shed by his Uncle who has no knowledge about how the body functions.
    Sorry about the rant.

This is a hell of a first fight. I see Alexander pulling out a pretty wide decision, but Bailey is only one punch away.

Bailey can make Alexander quit again if he has the stamina.

All he needs to do is hit the eye and make it burn and guaranteed, Alexander would quit.

Man, I completely forgot how simple-minded Alexander comes across in interviews.

    Hopefully, Bailey knocks him out.

If Alexander plans to just do enough to win this is going to be an atrocious fight to watch.

Devon should win this fight easy if he boxes.
