Maybe not boring per se but Seldon vs Seldon might be one for the ages. Both men down within the first 30 seconds - BUT still not a single, actual punch landed by either up to that point in the fight. . We’d have to assume some mighty powerful swings there given their apparently irresistible slipstreams. Still valid scoring “contactless” punches perhaps ? even if the effect was “non local”

Any of the best known defensive fighters like Locche, Mayweather, Benitez, etc. A few that that comes to mind is Bernard Taylor, i always thought he used to run too much. His fight with Pedroza he ran all 15 rounds one of the worst fights i've ever seen. Can't imagine how boring that would be him fighting himself. Eddie Mustafa Muhammad fighting himself would be a snoozefest aswell.
Chris Byrd vs Eddie Chambers, but if they fought in real life, Eddie was much younger so I think he would have beaten Byrd in a careful Chess match type fight. Definitely not a fight for guys who like slugfests.
Well, I’m shocked Greb vs Greb hasn’t been submitted as yet. Yaaaawwnnn! Since he obviously didn’t exist, given a route over say 15 rounds, you’d just be staring at an empty ring for close to a full hour (rest periods included, of course. Why included, you ask?
