This should put an end to all Khan vs Hatton talk despite Khan showing full interest in guys coming off losses or grandfathers. Good decision for Hatton, at least we know he wants to carry on.
You will find most young fighters look for these types of fights to build themselfs up, people need to remember Khan is still only 22 and is no where near his prime, yet he might become a WBA World Champion later this month. When Khan is 25 and has been with Dr.Roach for a number of years, who knows where he will be in World rankings or who he had fought.

It's normal to have random trainers at start and it was also obvious he's showing zero improvements with his "entertain crowd first" style which quickly backfired as many expected it to. As far as looking for these fights I would prefer to see him fight/beat active champions or maybe a rematch with Prescott. Such fights can help him improve much better.
I think fighting Kotelnik is a good step up in class, and weight. This fight should make Khan think and box and is a great learning fight for Khan at this stage of his young career.
