I don't think you can really name fights, HBO only aired the bouts which also took place on other networks at the same time. You really need to talk about the HBO production specifically, the commentary, interviews etc. I thought one of the funniest moments was Merchant telling Mayweather 50 years ago he would kick his ass.
“WE GOT A BRAND NEW HW CHAMPION AND HE’S FROM THE UNITED STATES!!!” -Lampley when Rahman KTFO of Lewis

Wilson putting Briggs to sleep. Jefferson knocking out Maurice Harris. Maskaev knocking Rahman out the ring. Morales vs Barrera I, especially round 5.
Just way too many great fights to list. A few scattered favorite moments, though, off the top of my head: "Pour some water on his balls!" (Ray Torres translating in the corner) "It looks like an oreo cookie!" (Larry Merchant on Mills Lane, trying to break up Lewis vs Akinwande) "Wooooo!! Un-heard of! Un-heard OF!" (George Foreman, Jones body shot on Hill) "Tonight, Allah is spelled Barerra. B-A-R-R-E-R-A" (Lampley late in MAB vs Hamed) Michael Buffer introducing Chavez & ODLH in 1996 (prime Buffer at his very best) "It happened! It happened" (Lampley calling Foreman KO of Moorer) "This fight has gone exactly the way I thought it would" (Emmanuel Steward, in about 75 fights) "He's boxing really strongly right now, looking good in there, really boxing right about now" (Lennox Lewis, always) "Tonight we have a big black guy fighting a squat white guy, at ummm ... 139 pounds" (Fran Charles, probably) "Welcome to HBO Boxing. Tonight we have for your viewing entertainzzzzzzzzzzz" (Bob Papa, usually) "How do you like it?!!?" (Barry Thompkins, after Hagler vs Leonard)
"Ohhhhh! I think he broke his legs" - George Foreman on seeing Lennox Lewis deck Michael Grant "If I was 200 years younger, I'd kick your ass" - Larry Merchant addressing his eminence, Floyd Mayweather Jr
