I'm just curious, who was the first fighter to ever win a world title in two weight classes?

Would it be Bob Fitzimmons? He definitely was the first 3 weight champion. Middleweight then Heavyweight. And later on a new Light-Heavyweight.

Without looking it up, my guess would be George Dixon.

I'm fairly certain nobody acomplished it before 1893, which would make Dixon the first.

Possibly. The divisions below Lightweight were so poorly defined then that it's quite tricky

It might be possible Oliver L. Kirk; in Featherweight and Bantamweight.
