A blackbelt subbing a 1-0 wrestler is not an impressive win. And that version of Nog would have been beaten by a lot of fighters.

Not impressive only of you don't have a brain to realize that wrestler is a UFC champion who seems prepared to hold that belt for a long time or a functioning pair of eyes to just see how good Lesnar actually is as a fighter.

It is impressive when Lesnar proves in his next 3 fights he isn't any old 1-0 fighter.

He wasn't the UFC champ at the time. He was a big, athletic wrestler with barely any fighting experience and a rudimentary sub defense.

He just didn't have the training and experience to survive on the ground with a bjj black belt. It's similar to Enson subbing Randy, only that Randy had 4 times the experience when he first lost by submission.
