Como by itself, sans qualifying pronoun, doesn't have anything to do with the verb comer (to eat), of which "yo como" is the first person conjugation. By itself the word como just means "like" or "in the manner of". Etymologically unrelated to "I eat" but a homonym spelled and pronounced the same..like a dog's "bark" or tree "bark".

You can use "como" without the qualifying pronoun to describe what you ate; in fact, based on what I've learned of the language, the conjugation of the verb serves to determine the pronoun of the sentence and often makes the pronoun un-necessary. That said, "como" also means "like" or "how" so it comes down to context and interpretation.

 

Hm interesting. Well, I certainly can't speak to what is common usage in Spain or Latin American countries but I do know all the Salvadoran/Guatemalan/Mexican kitchen folk I worked with always said "yo como" to refer to eating something and only ever used como by itself with the sense of like or "how" (as in how are you, how did yesterday go? etc) which I had assumed was done intentionally to avoid confusion.
